Ingredients list for Fruity Coconut Rice

  • 1 cup Rice , soaked, pressure cooked till soft
  • 1 can Mixed fruits , (pineapple, peach, papaya)
  • 2 cups Coconut milk
  • 2 tablespoons Butter
  • 7-8 tablespoons Brown sugar
  • 2 tablespoons Pistachios , chopped
  • 1 tablespoon Almonds , slivered

Method

  1. Heat coconut milk in a deep non-stick pan, add cooked rice, mix well and simmer.
  2. Heat butter in another non-stick pan, add mixed fruit and toss. Add 3 tbsps brown sugar, mix and let the sugar melt.
  3. Add 4-5 tbsps brown sugar to the rice mixture and mix till the sugar melts.
  4. First put the rice mixture in a serving bowl, sprinkle pistachios over it. Place fruit mixture over them and sprinkle almonds on top. Serve.
