Ingredients list for Fish with Roasted Pepper and Coriander Dressing
- 600 grams Fish Fillets boneless, cut into 3 inch pieces
- 1 large Red capsicum roasted, peeled and diced
- ¼ cup Fresh coriander leaves chopped
- to taste Salt
- to taste Crushed black peppercorns
- 2 tablespoons Lemon juice
- 3 tablespoons Olive oil
- 6-8 Garlic cloves chopped
- 2 tablespoons Fresh parsley chopped
- 1 teaspoon Red chilli flakes
Method
- Place fish pieces on a plate. Sprinkle salt, crushed peppercorns and 1 tablespoon lemon juice and spread evenly on the pieces. Set aside for 10-15 minutes.
- To make the dressing, heat 2 tablespoons olive oil in a non-stick pan. Add garlic and sauté for 2 minutes.
- Add capsicum, coriander leaves, parsley, chilli flakes, salt and crushed peppercorns, mix well and sauté for 1 minute. Add remaining lemon juice and remove from heat. Set aside.
- Heat the remaining oil in a non-stick grill pan. Place the marinated fish pieces on it and cook for 2 minutes on each side.
- Serve hot with the prepared dressing.
