Ingredients list for Date and Walnut Cake - SK Khazana

  • 1/4 cup + to sprinkle Seedless dates chopped
  • 1/4 cup + to sprinkle Walnuts chopped
  • 1 cup Butter
  • 3/4 cup Castor sugar
  • 3 Eggs
  • 2 teaspoon Vanilla essence
  • 1 cup + 2 tablespoons Refined flour
  • 1 teaspoon Baking powder
  • to taste Salt
  • 1/4 cup Milk
  • for dusting Icing sugar

Method

  1. Preheat an oven to180º C. Grease a loaf tin, sprinkle some dry flour all over and remove excess flour.
  2. Take butter and sugar in a mixing bowl and beat with a hand blender till light and fluffy.
  3. Break in 1 egg at a time and beat till well incorporated.
  4. Add vanilla essence and beat again. Sieve together refined flour, baking powder and salt into the bowl and fold in with a spatula.
  5. Take walnuts and dates in another bowl, add 2 tablespoons flour and mix well.
  6. Add this mixture to the batter and fold in. Add milk and mix well to form a lump free batter.
  7. Pour the batter into the prepared loaf tin and gently tap it on the worktop to level the surface. Sprinkle some dates and walnuts on top.
  8. Keep the loaf tin in the preheated oven and bake for 35-40 minutes.
  9. Take the tin out of the oven and let it cool down to room temperature. Slice, arrange the slices on a serving platter, dust some icing sugar on top and serve.
