Ingredients list for Date and Walnut Cake - SK Khazana
- 1/4 cup + to sprinkle Seedless dates chopped
 - 1/4 cup + to sprinkle Walnuts chopped
 - 1 cup Butter
 - 3/4 cup Castor sugar
 - 3 Eggs
 - 2 teaspoon Vanilla essence
 - 1 cup + 2 tablespoons Refined flour
 - 1 teaspoon Baking powder
 - to taste Salt
 - 1/4 cup Milk
 - for dusting Icing sugar
 
Method
- Preheat an oven to180º C. Grease a loaf tin, sprinkle some dry flour all over and remove excess flour.
 - Take butter and sugar in a mixing bowl and beat with a hand blender till light and fluffy.
 - Break in 1 egg at a time and beat till well incorporated.
 - Add vanilla essence and beat again. Sieve together refined flour, baking powder and salt into the bowl and fold in with a spatula.
 - Take walnuts and dates in another bowl, add 2 tablespoons flour and mix well.
 - Add this mixture to the batter and fold in. Add milk and mix well to form a lump free batter.
 - Pour the batter into the prepared loaf tin and gently tap it on the worktop to level the surface. Sprinkle some dates and walnuts on top.
 - Keep the loaf tin in the preheated oven and bake for 35-40 minutes.
 - Take the tin out of the oven and let it cool down to room temperature. Slice, arrange the slices on a serving platter, dust some icing sugar on top and serve.
