By Sanjeev Kapoor 12 Feb 2016 in Recipes Course New Update Main Ingredients Paneer, Refined Flour Cuisine Fusion Course Snacks and Starters Prep Time 6-10 minutes Cook time 11-15 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Ingredients list for Crunchy Paneer 300 grams Paneer cut into 1 inch cubes 1/4 cup Refined Flour 1 tablespoon Oil 1/2 inch piece Ginger chopped 2 cloves Garlic chopped 1/4 stalk Celery chopped to taste Salt 5-6 Black peppercorns crushed pinch MSG 1/2 tablespoon Dark soy sauce 1/2 teaspoon Sugar 1 teaspoon Vinegar 2 stalks Spring onion green sliced Batter 3/4 cup Cornflour/ corn starch 6 tablespoons Refined flour (maida) 1/2 teaspoon Baking powder 1 teaspoon Baking powder to taste Salt Method Dust the paneer cubes with refined flour. Mix all the ingredients for the batter together with three-fourth cup plus one-and-a-half tablespoons of chilled water and whisk with a balloon whisk till smooth. Heat oil in a wok. Dip paneer cubes in the batter and deep-fry till golden and crisp. Drain on absorbent paper. Heat one tablespoon of oil in a wok; add ginger and garlic and sauté over medium heat for half a minute. Add celery and continue to sauté for half a minute more. Add fried paneer, salt, crushed peppercorns, MSG, soy sauce, sugar and vinegar and cook over high heat for one minute, stirring and tossing continuously. Serve hot, garnished with spring onion greens.
