Ingredients list for Creamy Mushroom Risotto-SK Khazana

  • 1 cup Arborio rice
  • 8-10 Button mushrooms sliced
  • 10-12 Shimeji mushrooms chopped
  • 1/4 cup Enoki mushrooms chopped
  • 1 tablespoon Olive oil
  • 1 tablespoon Garlic chopped
  • 1 Small onion finely chopped
  • 2 tablespoons White wine
  • 4 cups Vegetable stock
  • to taste Salt
  • 2 + for garnish Fresh thyme sprigs
  • 1 teaspoon Fresh cream
  • 1 teaspoon Butter
  • 2 tablespoons Parmesan cheese grated

Method

  1. Heat olive oil in a non-stick pan. Add garlic and sauté till golden brown.
  2. Add onion, mix and sauté till translucent. Add button, shimeji and enoki mushrooms, mix well, and cook for 4-5 minutes.
  3. Add Arborio rice, mix well and cook for 1-2 minutes. Add white wine, stock and salt, mix and simmer for a few minutes.
  4. Add thyme, mix well, cover and cook for 10-15 minutes. Add cream, butter and parmesan cheese and mix till the cheese melts.
  5. Garnish with a thyme sprig and serve hot.
