Ingredients list for Cream Style Corn Espresso

  • 1 tin Sweet Corn
  • Capsicum
  • 2 tablespoons Oil
  • 1/2 medium Onion
  • 1/2 medium Green capsicum cut into small pieces
  • 1/2 medium Red capsicum cut into small pieces
  • 1/2 medium Yellow capsicum cut into small pieces
  • 1 teaspoon Red chilli sauce
  • 1 teaspoon Soy sauce
  • 2 tablespoons Spring onion greens chopped
  • to taste Salt
  • 1 teaspoon Vinegar
  • 1/2 head Iceberg lettuce

Method

  1. Heat oil in a non stick pan. Finely chop onion and add. Add green, red and yellow capsicum and saute.
  2. Add ½ tsp red chilli sauce and soy sauce and mix. Add cream style sweet corn and mix well. Add spring onion greens and mix. Add salt, remaining red chilli sauce and vinegar, mix and cook till thick.
  3. Chop iceberg lettuce and put them into small glass cups. Put the sweet corn mixture over and serve immediately.
