Ingredients list for Corn And Spinach Rice

  • 3/4 cup Corn kernels blanched
  • 2 medium bunch Fresh spinach leaves (palak) finely shredded
  • 2 cups Cooked basmati rice
  • 2 tablespoons Oil
  • 1/4 teaspoon Cumin seeds
  • 1 1/2 teaspoons Ginger-green chilli paste
  • to taste Salt
  • 1 tablespoon Lemon juice

Method

  1. Heat the oil in a deep non stick pan. Add the cumin seeds and when they begin to change colour, add the ginger-green chilli paste and sauté for thirty seconds.
  2. Add the corn kernels. Mix well and sauté for thirty seconds. Add salt. Add the spinach leaves and toss well. Cook for one minute.
