Ingredients list for Coffee Cupcakes with Coffee Cream Cheese Frosting

  • Cupcakes
  • 1/4 cup Coffee decoction
  • 1 1/2 cups Refined flour
  • 1/2 cup Butter
  • 2/3 cup Granulated sugar
  • 2 Eggs
  • 2 teaspoons Vanilla essence
  • 1/4 teaspoon Salt
  • 1 1/2 teaspoons Baking powder
  • 2 tablespoons Milk
  • Frosting
  • 1/2 cup Butter
  • 2 cups Icing sugar
  • 1/2 teaspoon Vanilla essence
  • 1 tablespoon Coffee decoction
  • 1 cup Cream cheese

Method

  1. Preheat oven to 180° C.
  2. Take butter in a bowl, add sugar and beat with a hand blender till light and fluffy. Add eggs, one at a time, and beat well. Add vanilla essence and beat again.
  3. Add flour, salt, baking powder and coffee decoction and fold in till well combined into a lump free batter. Add milk and mix well. Transfer the batter in a piping bag.
  4. Pipe out the batter into cupcake moulds filling them till ¾ full. Keep the moulds into the preheated oven and bake for 15-20 minutes. Bring the mould out of the oven and set aside to cool slightly before demoulding. Set aside to cool completely.
  5. For the frosting, take butter in a bowl, add icing sugar, vanilla essence and coffee decoction and beat with an hand blender till light and fluffy. Add cream cheese and beat till well combined. Fill the frosting in a piping bag fitted with a star nozzle. Refrigerate for 15-20 minutes.
  6. Pipe out the frosting on the cupcakes and serve.
