Ingredients list for Chicken and Pineapple Salad

  • 1 Boneless chicken
  • 1 Pineapple cut into slices
  • 3-4 Garlic cloves
  • 1 tablespoon Oil
  • to taste Salt
  • 2-3 Spring onions with greens
  • ¼ cup mayonnaise
  • 2 tablespoons Tomato ketchup
  • a few drops Tabasco sauce
  • to taste Crushed black peppercorns

Method

  1. Cut chicken into small cubes. Slice garlic.
  2. Heat oil in a non-stick pan. Add garlic and sauté till golden. Add chicken cubes, salt, toss well and cook till the chicken is done. Transfer cooked chicken onto a plate and cool to room temperature.
  3. Slice spring onion bulbs and chop the greens.
  4. Cut pineapple slices into cubes and place in a bowl. Add spring onion bulbs, mayonnaise, tomato ketchup, Tabasco sauce, crushed peppercorns and salt. Mix well.
  5. Add some of the spring onion greens and mix well. Add chicken and mix well. Refrigerate to chill.
  6. Serve chilled garnished with remaining spring onion greens.
