Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Chicken Pizza Recipe

  • Chicken grilled, shredded 1 cup

  • Finger millet flour ½ cup

  • Refined flour ½ cup

  • Whole wheat flour ½ cup + for dusting

  • Rolled oats ½ cup

  • Fresh yeast 20 grams

  • Castor sugar 1 teaspoon

  • Salt to taste

  • Olive oil 2 tablespoons

  • Onion chopped 1 medium

  • Garlic cloves chopped 4-5

  • Celery chopped 1 inch

  • Tomato concasse 1 cup

  • Crushed black peppercorns to taste

  • Dried oregano 1 teaspoon

  • Basil leaves 6-8

  • Green capsicum cut into strips 1 small

  • Red capsicum cut into strips 1 small

  • Yellow capsicum cut into strips 1 small

  • Onion sliced 1 medium

  • Pickled jalapenos sliced 1-2

  • Black olives sliced 3-4

  • Mozzarella cheese cut into small cubes 15 grams

  • Red chilli flakes 1 teaspoon


Step 1

Take the yeast in a bowl. Add castor sugar and some water, mix and set aside to activate.

Step 2

Mix together finger millet flour, refined flour, wheat flour and oats in a bowl.

Step 3

Add the activated yeast and mix well. Add sufficient water and knead. Add salt and 1 tablespoon olive oil and knead into soft dough. Set aside to prove for 10-15 minutes.

Step 4

Preheat oven at 200º C.

Step 5

Heat remaining olive oil in a non-stick pan. Add onion, garlic and celery and sauté till the onion turns translucent.

Step 6

Add tomato concasse, mix well and cook for a minute. Add salt, crushed peppercorns and little water, mix and cook on low heat for 10-15 minutes.

Step 7

Place the proved dough on the worktop and knock back to release the excess air. Dust with some wheat flour and roll out into a medium size thick disc.

Step 8

Place the prepared base on a baking tray and prick all over with a fork. Place the tray in the preheated oven and bake for 8-10 minutes.

Step 9

Add oregano and 3-4 torn basil leaves in the sauce and mix well.

Step 10

Spread the sauce evenly on the baked base. Top with chicken, green, red and yellow capsicum strips, sliced onion, jalapenos, olives, cheese cubes, remaining torn basil leaves and chilli flakes. Put the tray in the oven and bake at 180º C for 10-12 minutes.
