Ingredients
- 450 grams boneless chicken,cut into cubes
- Boiled bow-tie pasta , to serve
- 1 tablespoon oil
- 1 tablespoon chopped garlic
- 2 medium onions, chopped
- 1½ teaspoons red chilli flakes
- 1 cup diced mixed capsicums
- Crushed black peppercorns to taste
- Salt to taste
- 1 cup tomato puree
- ¼ cup chicken stock
- Sour cream for garnish
Method
- Heat oil in a non-stick pan. Add garlic and sauté for a minute. Add onions, mix and sauté for a minute.
- Add chili flakes and mix well. Add coloured capsicums, mix and sauté for a minute.
- Add chicken, mix well and cook for 2 minutes. Add crushed peppercorns and salt and mix well.
- Add tomato puree, mix well and cook for 2 minutes. Add chicken stock, mix well and simmer till the chicken is fully cooked.
- Place pasta in a large serving platter. Top with the chicken mixture, garnish with a dollop of sour cream and mint sprig.
- Serve immediately.
