Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Chicken Grilled with Apple and Leek Recipe

  • Boneless chicken breast 1

  • Apples peeled, cored and cut into thin slices 1 medium

  • Leek finely chopped 1 stalk

  • Olive oil 1 tablespoon + to deep fry

  • Salt to taste

  • Mixed herbs 1 teaspoon

  • Black pepper powder to taste

  • Garlic 1 tablespoon

  • Green zucchini sliced 1 medium

  • Carrot peeled and cut into juliennes ½ medium

  • Asparagus cut into pieces 2 stalks

  • Chicken stock ½ cup

  • brown sugar/jaggery 1 tablespoon

  • Vinegar 1 tablespoon

  • Butter 2 tablespoons


Step 1

Slit chicken horizontally and open the flaps. Place on a plate, add 1 tablespoon olive oil, salt, ½ teaspoon dried herbs, pepper powder and garlic. Rub well and set aside to marinate for 5-10 minutes.

Step 2

Heat some olive oil in a non-stick grill pan. Place marinated chicken on it and grill till evenly done from both sides.

Step 3

In the same pan, add zucchini, carrot and asparagus and grill for 2 minutes. Add pepper powder and salt, mix well and remove from heat. Set aside.

Step 4

Heat chicken stock in a non-stick pan. Add leek and bring to a boil. Add ½ tablespoon brown sugar, vinegar and salt, stir to mix and cook for 2-3 minutes. Remove from heat and set aside.

Step 5

Heat butter in another non-stick pan. Add apple slices and stir, cook for 5 minutes. Add remaining brown sugar and remaining herbs, mix well and cook for 1-2 minutes. Remove from heat.

Step 6

Place grilled chicken on a serving platter. Top with cooked leek and add cooked apple slices on top. Place the grilled vegetables on the side and serve immediately.
