Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Chhunda - SK Khazana Recipe

  • Raw mangoes 6

  • Salt 1 tablespoon

  • Turmeric powder 1/4 teaspoon

  • Sugar 1 cup

  • Cumin seeds 1 tablespoon

  • Kashmiri red chilli powder 1 tablespoon


Step 1

Peel and grate mangoes in a bowl. Add salt and mix and set aside for 2 hours.

Step 2

Add turmeric powder and sugar and mix well. Cover tightly with a muslin cloth and keep in the sun for 7 days or till one string consistency is formed. Keep mixing every day.

Step 3

Dry roast cumin seeds till fragrant. Grind to a coarse powder, add to the mangoes along with red chilli powder and mix well. Cover tightly with a muslin cloth and keep in the sun for 1 day.

Step 4

Serve or store in airtight container.
