Ingredients for Cake Recipe

  • Refined flour (maida) 1 cup + for dusting

  • Butter 1 cup + for greasing

  • Castor sugar (caster sugar) 1 cup

  • eggs 2

  • Baking powder 1 teaspoon

  • Almonds sliver 1 tablespoon

  • Pistachios chopped 1 tablespoon

  • Raisins 1½ tablespoons

  • Oats ½ cup

  • Mixed fruits pulp (pineapple, apples, kiwis and oranges) 1 cup

  • Mixed Fruit Juice (pineapple, apples, kiwis and oranges) ¼ cup


Step 1

Preheat oven to 180° C. Grease a loaf tin with some butter and dust with some flour.

Step 2

Cream together butter and castor sugar in a bowl with an electric beater. Break in eggs, one by one, and whisk well.

Step 3

Sieve together flour and baking powder into another bowl. Add almond slivers, pistachios and raisins and mix. Add oats and mix well.

Step 4

Fold mixed fruit pulp and flour mixture gradually into the egg mixture. Add mixed fruit juice and mix well.

Step 5

Pour the batter into the greased loaf tin and tap.

Step 6

Place the tin in the preheated oven and bake for 30-35 minutes. Remove from oven, cool and demould.

Step 7

Slice and serve.
