Ingredients list for Burnt Ginger Rice

  • 4 inch pieces Rice sliced thinly
  • 1 cup Garlic soaked
  • 6 tablespoons Oil
  • 1 small Onion finely chopped
  • 1 tablespoon Light soy sauce
  • 1/2 tablespoon Tomato sauce
  • 1/2 tablespoon Red chilli paste
  • 1/4 teaspoon MSG
  • to taste Salt
  • 1 tablespoon Fresh coriander leaves chopped
  • 1 tablespoon Vinegar

Method

  1. Cook rice in four cups of boiling water until just cooked. Drain well and cool.
  2. Heat oil in a wok, add ginger and stir-fry for two to three minutes or until the ginger turns brown in colour.
  3. Remove with a slotted spoon and place on an absorbent kitchen towel. Reserve some ginger pieces for garnish and finely chop the remaining.
  4. Reheat oil, add fried ginger and onion and stir-fry for two to three minutes.
  5. Add rice, light soy sauce, tomato sauce, red chilli paste, MSG and salt. Cook on high heat for a minute, stirring and tossing continuously.
  6. Add coriander leaves, vinegar and serve hot, garnished with the reserved fried ginger slices.
