Ingredients list for Berries and Oat Walnut Muffins

  • 1/2 cup Mixed berries
  • 3/4 cup Oats
  • 1/4 cup Walnuts chopped roasted
  • 1/2 cup Refined flour (maida)
  • 1/2 cup Butter
  • 1/2 cup Castor sugar (caster sugar)
  • 1/2 cup brown sugar/jaggery powdered
  • 2 Eggs
  • 1 teaspoon Vanilla essence
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/2 cup Milk

Method

  1. Preheat oven at 180° C. Line individual silicon muffin moulds with paper cupcake moulds.
  2. Cream together butter, castor sugar and brown sugar in a bowl. Add eggs and mix. Add vanilla essence, mixed berries, walnuts and oats and mix well.
  3. Sieve in flour, baking powder and baking soda and fold well.
  4. Fill in ¾ of each lined silicon muffin moulds with prepared berries-oats mixture and tap.
  5. Put the prepared silicon muffin moulds on a baking tray. Place the baking tray in preheated oven and bake for 25-30 minutes.
  6. Demould and serve.
