By Sanjeev Kapoor 04 May 2016 in Recipes Course New Update Main Ingredients Refined Flour, Yogurt Cuisine Indian Course Mithais Prep Time 51-60 minutes Cook time 26-30 minutes Serve 4 Taste Sweet Level of Cooking Moderate Others Veg Ingredients list for Balushahi 1 1/2 cups Refined Flour 2/3 cup + to deep fry Yogurt 1/4 teaspoon Soda bicarbonate 8 tablespoons Yogurt beaten 2 cups Sugar 2 tablespoons Milk 4-5 Pistachios finely chopped Method Place the refined flour in a bowl. Add soda bicarbonate and mix. Add two third cup olive oil and mix. Add yogurt and mix. Add a little milk and knead into a soft dough. Rest the dough for forty five minutes. Heat together sugar and one cup of water till it reaches a two-string consistency. . Midway through add milk and when the scum rises to the surface remove and discard. Divide the dough into equal lemon sized portions and shape into smooth balls. Make a slight dent in the centre with your thumb and rest the balls for a few minutes. Heat sufficient olive oil in a kadai. When the oil is medium hot, gently slide in the balls and deep fry on low heat till golden. Drain and place them on a plate. Drizzle the syrup on the balushahis. Garnish with pistachios and serve when cooled.
