Baingan Keema Bharta

Ingredients 

  • 1 large brinjal, roasted and peeled
  • 1/2 cup soya granules, soaked
  • 2 tablespoons oil
  • 1/4 teaspoon onion seeds (kalonji)
  • 1 teaspoon cumin seeds
  • 2 inch ginger pieces, finely chopped
  • 2 medium onions, finely chopped
  • 3 medium tomatoes, finely chopped
  • 1 1/2 teaspoons red chilli powder
  • 1/4 teaspoon turmeric powder
  • Salt to taste
  • 3 tablespoons finely chopped fresh coriander leaves 
  • Fresh mint leaves for garnish

Method

  1. Roast the brinjal over direct flame till the skin gets charred. Cool, peel and finely chop or mash it.
  2. Heat oil in a non stick kadai. Add kalonji, cumin seeds, ginger, green chillies, onions and sauté lightly.
  3. Add tomatoes and cook till pulpy. Add red chilli powder, turmeric powder, salt, brinjal, soya granules, ¼ cup water and mix well.
  4. Cook till the soya granules are cooked.Add coriander leaves and mix.
  5. Transfer into a serving bowl, garnish with mint leaves and serve hot
