How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Arancini - SK Khazana Recipe

  • Arborio rice 3/4 cup

  • Mozzarella cheese cubes as required

  • Olive oil 1 tablespoon

  • Garlic finely chopped 1 tablespoon

  • Onion finely chopped 1 tablespoon

  • Fresh thyme sprig 1

  • Vegetable stock 2 cups

  • Salt to taste

  • Crushed black peppercorns to taste

  • Oil for deep frying + for greasing

  • Refined flour slurry as required

  • Breadcrumbs dried as required

  • Marinara sauce to serve


Step 1

Heat olive oil in a non-stick wok, add garlic and saute till golden brown. Add onion, mix well and saute till translucent. Add rice, mix and saute for 1 minute.

Step 2

Separate the leaves of thyme and add into the pan, Add saffron and mix well.

Step 3

Add vegetable stock and salt, mix well and let the mixture come to a boil. Add crushed black peppercorns, mix well, cover and cook till the rice is done.

Step 4

Open the lid of the pan and mix well and take the pan off the heat. Set aside to cool down to room temperature.

Step 5

Heat sufficient oil in a deep pan. Take refined flour slurry in a bowl and spread dried breadcrumbs on a plate.

Step 6

Grease your palms with oil, take a portion of the rice mixture and roll into a ball. Make a cavity in the center, place a mozzarella cheese cube in it, seal and shape it into a ball.

Step 7

Dip each ball in refined flour slurry and roll in breadcrumbs till well coated. Slide them into hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.

Step 8

Arrange them on a serving platter and serve hot with marinara sauce.
