Ingredients list for Apricot Pound Cake

  • 1/2 cup Canned apricots
  • Refined flour
  • 3/4 cup Canned apricots
  • 2 cups Butter
  • 2 cups Sugar
  • 5 Eggs
  • 1 tablespoon Vanilla essence
  • 2 cups Refined flour (maida)
  • 1 teaspoon Baking powder
  • 1/2 cup Milk

Method

  1. Preheat oven to 180°C.
  2. Place butter in a bowl, add sugar and beat with a hand blender. Break 2 eggs into the bowl and beat. Break 3 more eggs into the bowl and continue to beat.
  3. Add vanilla essence and beat some more. Sieve together refined flour and baking powder into the bowl and mix with a spoon first. Then beat with a hand blender. Add milk and mix well.
  4. Add both the apricots and mix well. Pour the batter into a silicon cake mould and bake in the reheated oven for 40 minutes. Let it cool, then take it out of the mould.
  5. Cut into slices and serve.
