Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Achari Besan-Cook Smart Recipe

  • Coarse gram flour (jada besan) 5 tablespoons

  • Oil 4 tablespoons

  • Fenugreek seeds (methi dana) 1 teaspoon

  • Asafoetida (hing) 1/2 teaspoon

  • Mustard seeds 1 teaspoon

  • Onion seeds (kalonji) 1 teaspoon

  • Medium onion finely chopped 1

  • Spring onions with greens bulbs and greens finely chopped separately 3-4

  • Medium tomatoes 4

  • Ginger-garlic paste 1 tablespoon

  • Salt to taste

  • Red chilli powder 2 teaspoons


Step 1

Heat oil in a non-stick pan, add fenugreek seeds, asafoetida, mustard seeds and onion seeds and let them splutter. Add onion and spring onion bulbs and sauté till translucent.

Step 2

Cut tomatoes into big cubes.

Step 3

Add ginger-garlic paste and mix well.

Step 4

Add gram flour to the pan and saute for 2-3 minutes. Saute on high heat, stirring continuously, till the gram flour starts to change color and becomes fragrant.

Step 5

Add tomatoes and mix well. Drizzle 2 tablespoons water in the pan and mix well. Add salt and red chilli powder and mix well. Cover and cook for 10-12 minutes, stirring often.

Step 6

Add spring onion greens and mix again. Cook further 2-3 minutes.

Step 7

Serve hot.
