Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Badam Doodh - SK Khazana Recipe

  • Almonds 1 1/4 cups

  • Milk 8 cups

  • Sugar 1 cup

  • Nutmeg (jaiphal) powder 1/2 teaspoon

  • Green cardamom powder 1/2 teaspoon

  • Saffron a large pi to sprinkle

  • Almond slivers for garnishing

Method

Step 1

Blanch, drain, peel and blend almonds to a smooth paste with some water.

Step 2

Heat milk in a thick-bottomed vessel and bring to a boil. Simmer on medium heat till the milk reduces and thickens slightly.

Step 3

Add almond paste, sugar, nutmeg powder, cardamom powder and saffron, mix well and simmer on low heat for 15-20 minutes.

Step 4

Pour into individual glasses, sprinkle cardamom powder, garnish with almond slivers and saffron and serve hot.
