Ingredients
- 1 medium watermelon
- Chopped watermelon as required
- 12-16 pieces of almond gum (gondkatira)
- A pinch of salt
- 1 lemon
- 8 tablespoons castor sugar
- Ice cubes as required
- Lemon slices as required
- Fresh mint leaves as required
- Watermelon wedge for garnish
- Fresh mint sprig for garnish
Method
- Put almond gum pieces into a bowl, add ¾ cup water and set aside for 6-8 hours.
- Peel, remove seeds and cut watermelon into cubes and transfer into a grinder jar.
- Add salt and squeeze juice of the lemon into the jar. Add castor sugar and grind to fine mixture.
- Put chopped watermelon pieces and ice cubes into each of 4 serving glasses. Add lemon slices and mint leaves. Put 1 tablespoon almond gum water into each glass.
- Pour ground watermelon mixture into each glass. Garnish each glass with a watermelon wedge and a mint sprig and serve chilled.
