Tandul Pav

Don’t be misled by the name. It does not have pav or bread in it. These are thick, soft pancakes served with coconut chutney. Guess, this is the locals’ daily bread.

Method

  1. Take rice flour in a large bowl, add green chillies, salt, coriander leaves and buttermilk and whisk well. Add 1½ cups water and whisk till a smooth batter is formed. Add fruit salt and mix well.
  2. Heat a non-stick shallow pan. Pour a ladleful of the batter and spread it lightly into a disc.
  3. Drizzle oil all around the disc, cover and cook on medium heat for 2-3 minutes. Flip the disc and cook the other side for 1-2 minutes. Use up the remaining batter similarly.
  4. Transfer them on serving plates and serve hot with coconut chutney.
