Ingredients
- Roasted carrot hummus as required
- 4 slices of sourdough bread
- Butter for applying
- Dijon mustard paste for applying
- Red cherry tomato halves as required
- 1 small onion, sliced and layers separated
- Banana chips as required
- Micro greens for garnish
- Black olive slices for garnish
- Toasted pine nuts for garnish
- Salt to taste
- Crushed black peppercorns to taste
- Olive oil for drizzling
Method
- Apply butter on both sides of the bread slices.
- Heat a non-stick grill pan. Place the bread slices and toast on both sides for 2-3 minutes.
- Place the grilled bread slices on the worktop, apply Dijon mustard and generously spread roasted carrot hummus. Arrange a few cherry tomato halves, place a few onion slices, a few banana chips, and garnish with some micro greens, black olive slices and a few toasted pine nuts. Sprinkle salt, crushed black peppercorns and drizzle olive oil.
- Transfer the sandwiches onto a serving platter and serve immediately.
