Roasted Carrot Hummus Sandwich

Ingredients

  • Roasted carrot hummus as required
  • 4 slices of sourdough bread
  • Butter for applying
  • Dijon mustard paste for applying
  • Red cherry tomato halves as required
  • 1 small onion, sliced and layers separated
  • Banana chips as required
  • Micro greens for garnish
  • Black olive slices for garnish
  • Toasted pine nuts for garnish
  • Salt to taste
  • Crushed black peppercorns to taste
  • Olive oil for drizzling

Method

  1. Apply butter on both sides of the bread slices.
  2. Heat a non-stick grill pan. Place the bread slices and toast on both sides for 2-3 minutes.
  3. Place the grilled bread slices on the worktop, apply Dijon mustard and generously spread roasted carrot hummus. Arrange a few cherry tomato halves, place a few onion slices, a few banana chips, and garnish with some micro greens, black olive slices and a few toasted pine nuts. Sprinkle salt, crushed black peppercorns and drizzle olive oil. 
  4. Transfer the sandwiches onto a serving platter and serve immediately.
