Ingredients
- 2 medium sweet potatoes (shakarkhand/ratalu)
- 2 tablespoons ghee
- 5-6 cashewnuts
- ¼ cup scraped fresh coconut + for garnish
- ½ cup sugar
- ½ teaspoon green cardamom powder
Method
- Slice the sweet potatoes into thin roundels and soak them in water.
- Heat ghee in a pan. Drain and add the sweet potato roundels and mix well.
- Add cashewnuts and continue to sauté on high heat till golden brown.
- Reduce the heat to medium, sprinkle 2 tablespoons water and mix. Add coconut, mix well, cover and continue to cook for 2-3 minutes.
- Add sugar and mix till well combined. Add green cardamom powder, mix well and cook till the sugar melts.
- Switch the heat off, transfer into a serving bowl and serve hot garnished with fresh coconut.
