Method

  1. Slice the sweet potatoes into thin roundels and soak them in water. 
  2. Heat ghee in a pan. Drain and add the sweet potato roundels and mix well. 
  3. Add cashewnuts and continue to sauté on high heat till golden brown. 
  4. Reduce the heat to medium, sprinkle 2 tablespoons water and mix. Add coconut, mix well, cover and continue to cook for 2-3 minutes. 
  5. Add sugar and mix till well combined. Add green cardamom powder, mix well and cook till the sugar melts.
  6. Switch the heat off, transfer into a serving bowl and serve hot garnished with fresh coconut.
