These omelettes are especially meant for those who have to avoid food that are high on cholesterol like egg yolks. Even the weight watchers will benefit from this omelette. The egg yolks can perhaps be used to make mayonnaise or some other dish.

·         16 eggs

·         1 medium onion, finely chopped

·         1 medium tomato, finely chopped

·         3-4 green chillies

·         4 tbsps chopped fresh coriander leaves

·         Salt to taste

·         4 tsps oil

·         Toasted bread slices to serve

·         Tomato ketchup to serve




1.      Break the eggs one by one, separate the egg whites from the yolks and keep them in separate bowls. Use the yolks for another recipe of your choice.

2.      Add onion, tomato, green chillies, coriander leaves and salt to the egg whites and whisk well with a fork.

3.      To make one omelette, heat 1 tsp oil in a non-stick pan. Add a portion of the egg whites mixture and gently stir in the centre of the omelette. Cook on medium heat for 2-3 minutes.

4.      Roll the omelette and transfer onto a plate. Cook more omelettes similarly.

5.      Keep each omelette on a serving plate and serve hot with toasted bread and tomato ketchup.
