Ingredients
- 1½ cups tamarind, soaked for 1 hour
- ½ cup granulated sugar
- ½ teaspoon red chilli powder
- ½ teaspoon black salt
- ¼ teaspoon roasted cumin powder
- Castor sugar for coating
Method
- Drain the tamarind into a large bowl. Reserve the liquid and remove the seeds from the tamarind.
- Transfer the tamarind into a blender jar and blend well. Add ⅓ cup reserved liquid and blend till the mixture turns smooth.
- Heat a non-stick wide shallow pan. Add sugar and the blended paste and mix well. Stir continuously till the sugar melts and the mixture thickens. It will start to leave the sides of the pan.
- Add red chilli powder, black salt and roasted cumin powder and mix well.
- Transfer the mixture onto a plate and allow to cool completely.
- Spread castor sugar on another plate. Take small portions of the mixture and shape into balls. Roll them in castor sugar till the balls are well coated on all sides and shape it into a ball again.
- Wrap each imli goli in individual plastic wrappers and store in an air tight container.
- Serve as required.
