Green Lasagna

Green lasagna is a variation of the traditional Italian dish that has spinach and pesto. These ingredients are layered between the pasta, chicken, and cheese. The green ingredients add a unique flavour and nutritional value to the dish.

Ingredients

  • 6 boiled lasagne sheets
  • 2 tablespoons olive oil
  • 1 tablespoon chopped garlic
  • ¼ cup finely chopped leeks
  • 1 tablespoon finely chopped celery
  • 2 green chillies, chopped
  • 200 grams chicken mince
  • Salt to taste
  • Crushed black peppercorns to taste
  • 1½ cups shredded spinach leaves
  • ¼ cup basil pesto
  • Cheese sauce as required
  • ½ cup grated mozzarella cheese
  • 50 grams parmesan cheese block
  • 10-12 green olive slices
  • Fresh basil sprigs for garnish

Method 

  1. Preheat oven to 180⁰ C.
  2. Heat olive oil in a pan, add garlic, leeks, celery and green chillies, mix and sauté for 30 seconds.
  3. Add chicken mince, mix and sauté for 2 minutes. Add salt and crushed black peppercorns, mix well and saute for 2 minutes. 
  4. Add spinach, mix and cook for 1-2 minutes.
  5. Add basil pesto, mix and continue to cook for 1-2 minutes.
  6. Take the pan off the heat and transfer a portion of the mixture into a 6 inch square glass baking dish. Spread a portion of the cheese sauce, place 2 lasagne sheets over it. Add another portion of the chicken mixture and spread it evenly. Drizzle another portion of the cheese sauce, top it with 2 lasagne sheets and repeat this process one more time. Top it up with some more cheese sauce and sprinkle mozzarella cheese. Grate parmesan cheese over it. Arrange some green olive slices on top. Keep the baking dish in the preheated oven and bake for 15-20 minutes.
  7. Bring it out of the oven and cut into squares. Transfer onto individual serving plates, garnish with basil sprigs and serve hot. noo
