Ingredients

  • 2 tablespoons roughly chopped green garlic bulbs
  • 2-3 tablespoons roughly chopped green garlic stalks
  • Sea salt to taste
  • 10-15 fresh basil leaves
  • 2 tablespoons pine nuts
  • 2-3 tablespoons grated parmesan cheese
  • ¼ cup extra virgin olive oil + to drizzle
  • Boiled pasta as required

Method

  1. Put green garlic bulbs in a mortar, add green garlic stalks and sea salt and crush coarsely with a pestle.
  2. Add basil leaves and continue to crush. Add pine nuts and crush.
  3. Add parmesan cheese and crush coarsely. Add extra virgin olive oil and mix well.
  4. Transfer into a serving bowl, drizzle extra virgin olive oil and use as required.
  5. To serve, take boiled pasta in a bowl, top it with pesto sauce and serve.
