Ingredients
- 2 medium tomatoes
- 1 medium English cucumber
- 1 medium onion
- 1 medium green capsicum
- Assorted lettuce leaves as required
- 8-10 pitted green olives
- 8-10 pitted black olives
- 50 grams feta cheese
- Dressing
- 1 tablespoon Dijon mustard paste
- 1 tablespoon lemon juice
- ¼ cup red wine vinegar
- Salt to taste
- Black pepper powder to taste
- ½ teaspoon dried oregano
- ¼ cup olive oil
Method
- Trim the top of the tomato and cut into thin wedges.
- Trim the two ends of the cucumber and vertically cut it in half. Cut each half into triangles.
- Halve the onion and thinly slice each half horizontally.
- Trim the top of the green capsicum and halve it, discard the seeds, and cut into thin strips.
- To make the dressing, put the Dijon mustard paste in a bowl, add lemon juice, red wine vinegar, salt, black pepper powder, dried oregano, and olive oil and whisk till well combined.
- Tear the lettuce leaves and arrange in a large bowl. Add tomato, cucumber, onion, capsicum, green olives, black olives, add small portions of the feta cheese, drizzle the dressing and serve immediately.
