Ingredients

  • 2 medium tomatoes
  • 1 medium English cucumber
  • 1 medium onion
  • 1 medium green capsicum
  • Assorted lettuce leaves as required
  • 8-10 pitted green olives
  • 8-10 pitted black olives
  • 50 grams feta cheese
  • Dressing
  • 1 tablespoon Dijon mustard paste
  • 1 tablespoon lemon juice
  • ¼ cup red wine vinegar
  • Salt to taste
  • Black pepper powder to taste
  • ½ teaspoon dried oregano
  • ¼ cup olive oil

Method

  1. Trim the top of the tomato and cut into thin wedges. 
  2. Trim the two ends of the cucumber and vertically cut it in half. Cut each half into triangles.
  3. Halve the onion and thinly slice each half horizontally.
  4. Trim the top of the green capsicum and halve it, discard the seeds, and cut into thin strips.
  5. To make the dressing, put the Dijon mustard paste in a bowl, add lemon juice, red wine vinegar, salt, black pepper powder, dried oregano, and olive oil and whisk till well combined. 
  6. Tear the lettuce leaves and arrange in a large bowl. Add tomato, cucumber, onion, capsicum, green olives, black olives, add small portions of the feta cheese, drizzle the dressing and serve immediately.
