Ingredients
- 2½ cups refined flour (maida)
- 250 grams soft butter
- 1 cup icing sugar
- 1 egg
- 1 teaspoon vanilla essence
- 5 tablespoons milk powder
- 2½ tablespoons cocoa powder
- 1 teaspoon instant coffee powder
- Desiccated coconut as required
- Chopped almonds as required
- Chopped pistachios as required
- Dark chocolate chips as required
Method
- Take butter in a bowl and beat with a hand blender for 1 minute. Add icing sugar and continue to beat till light and fluffy.
- Break egg directly into the bowl, add vanilla essence and beat for 1 minute or till the egg is well incorporated into the mixture.
- Sift refined flour into the bowl. Add milk powder and mix well.
- Divide the mixture into 2 equal portions. Add cocoa powder and instant coffee powder to 1 part and mix well. Refrigerate both the batters for 10-15 minutes.
- Preheat the oven at 160ºC. Line 3-4 baking trays with parchment paper.
- Take a portion of the white batter, shape into square and roll in desiccated coconut. Place on a baking tray.
- Take another portion of the batter, shape into square and coat 1 side with chopped almonds. Similarly coat 1 more portion with chopped pistachios. Keep both these squares on a baking tray.
- Take a portion of brown batter and roll into a disk, Sprinkle some dark chocolate chips and press lightly and place it on the baking tray.
- Place the tray in the preheated oven and bake for 10-15 minutes. Take the tray out of the oven and set aside to cool
- Transfer the remaining white batter in a piping bag fitted with star nozzle and pipe out rosettes on another baking tray. Make small dents in the centre. Bake for 8-10 minutes. Pipe mixed fruit jam in the centre and bake for 4-5 minutes more. Allow to cool
- Transfer the remaining brown batter in a piping bag fitted with star nozzle and pipe out rosettes on the baking tray. Make small dents in the centre.
- Bake in the preheated oven for 10-15 minutes. Once completely cooled, pipe melted dark chocolate in the centre.
- Serve in cookie box.
