Chocolate Chip Mint Ice Cream

Method

  1. Heat a non-stick pan, add fresh cream and mint leaves, mix and once the mixture comes to a gentle boil, take the pan off the heat and strain the mixture into a bowl. Add white chocolate and mix well till chocolate melts.
  2. Add mint paste and mix well.  Add peppermint essence and mix well.
  3. Add whipped cream and mix with light hands. Add dark chocolate chips and mix well.
  4. Transfer a portion of the mint cream mixture into an airtight container and sprinkle some chocolate chips. Repeat these layers till all the ice cream mixture and chips are used up.
  5. Close the lid and freeze for 6-8 hours.
  6. Scoop and serve chilled garnished with mint sprigs.
