Ingredients
- 2-3 tablespoons dark chocolate chips + to sprinkle
- ½ cup fresh mint leaves
- 1½ tablespoons boiled mint paste
- 1 cup fresh cream
- ½ cup chopped white chocolate
- ¼ teaspoon peppermint essence
- 2 cups whipped cream
- Fresh mint sprigs for garnish
Method
- Heat a non-stick pan, add fresh cream and mint leaves, mix and once the mixture comes to a gentle boil, take the pan off the heat and strain the mixture into a bowl. Add white chocolate and mix well till chocolate melts.
- Add mint paste and mix well. Add peppermint essence and mix well.
- Add whipped cream and mix with light hands. Add dark chocolate chips and mix well.
- Transfer a portion of the mint cream mixture into an airtight container and sprinkle some chocolate chips. Repeat these layers till all the ice cream mixture and chips are used up.
- Close the lid and freeze for 6-8 hours.
- Scoop and serve chilled garnished with mint sprigs.
