Chinchecha Sharbat

Tamarind is a good thirst quencher during hot summer months. Jaggery, roasted cumin powder and black salt is added to enhance the taste. This is Sanjeev Kapoor exclusive recipe.

Method

  1. Take 1½ cups water in a bowl and soak tamarind in it for 25-30 minutes.
  2. Strain the tamarind through a fine strainer into another bowl squeezing the tamarind to extract the pulp. Add jaggery and mix till it melts.
  3. Add black salt and roasted cumin powder and mix well. This is the tamarind syrup. 
  4. Pour 2 tablespoons tamarind syrup into each serving glass, add ice cubes and top up with chilled water. Mix and serve immediately.
