Ingredients
- 6-8 plums
- Salt to taste
- Crushed black peppercorns to taste
- 1-2 tablespoons extra virgin olive oil + for drizzling
- Ice cubes as required
- 2 cups arugula leaves
- 4-5 Bocconcini
- ProV Healthy Seeds Mix
- Balsamic dressing as required
Method
- Preheat oven to 200⁰ C.
- Halve the plums, remove the seeds and cut into wedges. Arrange the wedges on a baking tray, sprinkle salt, crushed black peppercorns and drizzle olive oil. Place the plums in the preheated oven and bake for 10-15 minutes or till well charred.
- Bring the tray out of the oven.
- To make the salad, take some ice cubes in a large bowl, add some water, add the arugula leaves in it and set aside for 5-10 minutes.
- Drain the arugula leaves and shred them roughly. Arrange the leaves on a large serving plate. Arrange the charred plums over it, break the Bocconcini into smaller pieces and place them in the plate as well. Sprinkle
