Ingredients
- 1 cup finely chopped cashewnuts + for garnish
- 3 eggs
- ¼ cup powdered sugar
- 1 teaspoon vanilla essence
- ¼ teaspoon green cardamom powder
Method
- Preheat oven to 100º C.
- Break the eggs, separate the yolks from the whites and put them in separate bowls.
- Beat the egg whites with an electric beater till it turns foamy. Add powdered sugar in batches and continue to beat till soft peaks are formed.
- Add vanilla essence, green cardamom powder and half the chopped cashewnuts and gently fold in till well combined.
- Add the remaining cashewnuts and gently fold in again. Drop small portions of the mixture at equidistance on a lined baking tray.
- Place the baking tray in the preheated oven and bake for 40-45 minutes.
- Bring the tray out of the oven and allow the macaroons to cool completely.
- Arrange the macaroons on a serving plate. Garnish with chopped cashewnuts and serve.
