Cashew Macaroons

A macaroon is a small cookie originally made with almonds, egg whites and sugar but nowadays almonds are replaced with coconut, cashewnuts or any other nut. This is an easy recipe with egg whites and cashewnuts that is so tasty that you’ll keep asking or more.

Ingredients

  • 1 cup finely chopped cashewnuts + for garnish
  • 3 eggs
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla essence
  • ¼ teaspoon green cardamom powder

Method

  1. Preheat oven to 100º C.
  2. Break the eggs, separate the yolks from the whites and put them in separate bowls. 
  3. Beat the egg whites with an electric beater till it turns foamy. Add powdered sugar in batches and continue to beat till soft peaks are formed.
  4. Add vanilla essence, green cardamom powder and half the chopped cashewnuts and gently fold in till well combined.
  5. Add the remaining cashewnuts and gently fold in again. Drop small portions of the mixture at equidistance on a lined baking tray.
  6. Place the baking tray in the preheated oven and bake for 40-45 minutes. 
  7. Bring the tray out of the oven and allow the macaroons to cool completely. 
  8. Arrange the macaroons on a serving plate. Garnish with chopped cashewnuts and serve.
