Cape Gooseberry Jam

This flavourful jam made with cape gooseberries is as tasty as its beautiful golden colour. Can be spread on toasts or even with pancakes. This is Sanjeev Kapoor exclusive recipe.

Ingredients

Method

  1. Roast the cape gooseberries in a pan on medium heat, stirring occasionally, for 5 minutes. 
  2. Add ¼ cup water, mix and cook till the mixture comes to a boil. Lightly mash the mixture with the back of spoon till pulpy.
  3. Add cinnamon stick and star anise and mix well. 
  4. Add sugar, mix and cook for 10-15 minutes or till the mixture thickens. Add lemon juice and mix well. Take the pan off the heat and allow to cool completely.
  5. Transfer into an air tight jar and serve as required.
