Ingredients
- 150 grams cape gooseberries, halved
- 1 inch cinnamon
- 1 star anise
- ¼ cup sugar
- 1 teaspoon lemon juice
Method
- Roast the cape gooseberries in a pan on medium heat, stirring occasionally, for 5 minutes.
- Add ¼ cup water, mix and cook till the mixture comes to a boil. Lightly mash the mixture with the back of spoon till pulpy.
- Add cinnamon stick and star anise and mix well.
- Add sugar, mix and cook for 10-15 minutes or till the mixture thickens. Add lemon juice and mix well. Take the pan off the heat and allow to cool completely.
- Transfer into an air tight jar and serve as required.
