Ingredients
- 1 cup ProV Premium Dried Blueberries + for sprinkling + for garnish
- 2 cups thick yogurt
- 1 lemon
- 3 tablespoons honey
- Fresh mint sprigs for garnish
Method
- Heat a shallow non-stick pan, add ProV Premium Dried Blueberry, zest the lemon directly into it and add ½ cup water. Mix and cook on medium heat for 6-8 minutes. Take the pan off the heat and allow to cool.
- Put the cooled mixture into a blender jar and blend for 1 minute. Add yogurt and honey and blend to a coarse paste.
- Transfer the mixture into an air tight container, sprinkle some ProV Premium Dried Blueberry, cover the container with its lid and keep it in the freezer for 7-8 hours or till set.
- Gently scrape the sides with a knife, de-mould the frozen yogurt, cut into slices. Arrange on a serving plate. Garnish with ProV Premium Dried Blueberry, mint sprigs and serve immediately.
