Ingredients
- 2 white dragon fruit
- 1 red dragon fruit
- 4-6 tablespoons sugar
- 1 lemon
- Ice cubes as required
- Lemon slices as required
- Fresh mint sprigs as required
- Tonic water as required
Method
- Peel and cut white dragon fruit and chop roughly. Scoop out small roundels from the red dragon and keep in a bowl.
- Transfer the white dragon fruit into a blender jar and add sugar. Squeeze the juice of lemon into the blender jar and blend finely. Strain the mixture into a jar.
- Put ice cubes into each serving glass. Add 2-3 tablespoons of strained mixture, 1-2 lemon slices, 1-2 fresh mint sprigs, 3-4 dragon fruit roundels and some more ice cubes.
- Top up with tonic water and serve chilled.
