Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Walnut Nankhatai - SK Khazana Recipe

  • California walnuts coarsely crushed 1/2 cup

  • Whole California walnuts as required

  • Refined flour (maida) 1 1/2 cups

  • Powdered sugar 3/4 cup

  • Gram flour (besan) 1/2 cup

  • Baking powder 1 teaspoon

  • Baking soda 1/4 teaspoon

  • Green cardamom powder 1/2 teaspoon

  • Desi ghee 1 cup


Step 1

Preheat oven to 180° C. Line a baking tray with a silicon mat.

Step 2

Take refined flour in a mixing bowl, add powdered sugar, gram flour, baking powder, baking soda, cardamom powder and crushed California Walnuts and mix well. Add ghee and mix till you get a breadcrumb consistency. Then knead with your hands into a semi soft dough.

Step 3

Divide the dough into equal portions, shape into balls and flatten lightly between your palms.

Step 4

Place them on the lined baking tray, place one California Walnut in the center of each nankhatai and press lightly.

Step 5

Keep the tray into the preheated oven and bake for 20-25 minutes. Remove from oven and cool down to room temperature.

Step 6

Serve or store in an air tight container to serve when required.
