Ingredients list for Vegetable Kurma
- 1 medium Vegetables boiled, peeled and cubed
- 1/4 cup Poppy Seeds
- 1 medium Carrot, diced
- 5-6 French beans, diced
- 50 grams Cauliflower, cut into florets
- 3 tablespoons Scraped coconut
- 3 Green chillies
- 1 teaspoon Fennel seeds (saunf)
- 1/2 teaspoon Poppy seeds (khuskhus/posto)
- 6 Cashewnuts
- 2 tablespoons Oil
- 1 Green cardamom
- 1 Clove
- 1 inch stick Cinnamon
- 1 medium Onion , sliced
- 10 cloves Garlic, sliced
- small bunch Fresh mint leaves, chopped
- small bunch Fresh coriander leaves, chopped + for garnishing
- 1/2 tablespoon Lemon juice
Method
- Grind together coconut, green chillies, fennel seeds, poppy seeds and cashew nuts and water and grind it to a smooth paste.
- Heat oil in a non-stick pan. Add green cardamoms, cloves and cinnamon stick and saute for a minute.
- Add onions and garlic and saute till translucent.
- Add mint leaves, coriander leaves, green peas, carrot, french beans and cauliflower and salt and mix well and cook till the vegetables get cooked.
- Add the ground mixture and saute for two minutes.
- Add the potatoes and lemon juice and cook for two minutes.
- Serve hot garnished with coriander leaves.
