Veg Mayonnaise Sandwich

Ingredients 

  • 8 white bread slices
  • 1 cup fresh cream
  • 150 millilitres olive oil
  • Salt to taste
  • ½ teaspoon sugar
  • 1 teaspoon mustard powder
  • 1 medium yellow capsicum, thinly sliced
  • 1 medium carrot, peeled and thinly sliced
  • 1 medium red capsicum, thinly sliced
  • ¼ cabbage, thinly shredded
  • ¼ red cabbage, thinly shredded
  • Butter as required
  • 2 cheese slices
  • Green chutney to serve
  • French fries to serve

Method

  1. Preheat a sandwich griller.
  2. To make veg mayonnaise, take the cream in a bowl and beat it slightly with a hand blender. Add oil gradually and beat till well blended. Add salt, sugar and mustard powder and mix well.
  3. Take yellow capsicum, carrot, red capsicum, cabbage and red cabbage in a bowl. Add some mayonnaise and combine well.
  4. Apply butter on 4 bread slices, spread the vegetable mixture generously 4 slices. Place a cheese slice on 2 breads and cover all with the remaining bread slices.
  5. Trim the edges of the sandwiches without cheese and cut them into triangles.
  6. Apply butter on top of sandwiches with cheese and place them on grill toaster and grill till grill marks appear. Slice into triangles.
  7. Arrange the sandwiches on a serving plate and serve immediately with green chutney and French fries.
