The Maharashtrian hospitality is legendary. The cuisine has subtle variety and strong flavours and varies from region to region. In ancient times in the more affluent homes, feasts often started at mid-day and ended when the sun set! The presentation of food was alluring with a practice to sing sacred verses to dedicate the meal to God.

Ingredients for Upavasachi Amti Recipe

  • Raw Peanuts dry roasted and powdered 1 1/2 cup

  • Coconut finely chopped 4

  • Lemon juice 2 tablespoons

  • Jaggery (gur) grated 1/2 tablespoon

  • Fresh coconut scraped 1 tablespoon

  • Salt to taste

  • Fresh coriander leaves chopped a few sprigs

  • Ghee 2 tablespoons

  • Cumin seeds 1/2 teaspoon

  • Cloves 4

Method

Step 1

Combine peanut powder, green chillies, lemon juice, jaggery, fresh coconut, salt and two to three cups of water.

Step 2

Boil mixture for twenty to twenty five minutes, if necessary add more water. (It must be of dal consistency) When the mixture is ready, keep it aside. Heat ghee in a pan.

Step 3

Add cumin seeds and cloves. When they crackle add the temper to the amti (mixture). Garnish with chopped coriander leaves and scraped fresh coconut. Serve hot.
