Ingredients list for Tomato and Almond Sauce

  • 4 medium Red tomatoes
  • 1 cup Almonds , blanched and peeled
  • 2 tablespoons Oil
  • 15-20 cloves Garlic
  • 1 1/2 medium Red capsicums
  • 1 Dried red chilli
  • 2 tablespoons Malt vinegar
  • to taste Salt
  • as required Corn chips


  1. Heat oil in a non-stick grill pan and add garlic cloves. Quarter red capsicums and add to the pan.
  2. Cut 4 slices from four sides of each of 4 tomatoes leaving the centre portion. Add these slices to the grill pan and grill everything together.
  3. Roughly chop remaining 2 tomatoes and put into a mixer jar along with the centre portions of the 4 tomatoes. Add dried red chilli, almonds, malt vinegar and salt and grind.
  4. Turn the capsicum and tomato pieces in the grill pan and continue to grill.
  5. Remove tomatoes and garlic from the grill pan and add to the mixer jar and grind.
  6. Add ¾ cup water in the grill pan and let the capsicums cook. When the capsicums are cooked, add them to the mixer jar and grind till smooth.
  7. This sauce can be used to cook pasta or fish or chicken or use as a dip.
  8. Pour into a serving bowl and serve as a dip with corn chips, potato chips or with vegetable sticks.
