Relish a salad platter of thinly sliced tomatoes, with chunks of mozzarella, a drizzle of olive oil, sliced black olives and basil leaves. Arrange in concentric circles on a nice white plate. The word relish is just perfect here. And not just salads, for all those rich and good-looking Indian preps, the very famous onion-tomato masala is a must! Then, there are soups, beverages (call for the Bloody Mary!), snacks and even desserts made of these plump red things. Even the green ones are in use today. Must say, terrific tomatoes!

Ingredients for Tomato Roll Recipe

  • Tomato Tortillas 4

  • Mozzarella Cheese 1 medium

  • Oil 1 tablespoon + 1 teaspoon

  • Onion 1 medium

  • Garlic cloves 8-10

  • Grated carrot 1/4 cup

  • Salt to taste

  • Crushed black peppercorns to taste

  • Potato boiled, peeled and grated 1 medium

  • Red chilli sauce 4 teaspoons

  • Mozzarella cheese grated 1/2 cup


Step 1

Heat 1 tbsp oil in a non-stick pan.

Step 2

Finely chop onion, garlic cloves and green capsicum in a chopper and put in the pan.

Step 3

Sauté for a minute, add carrot, salt and crushed peppercorns and sauté further till the vegetables are soft. Add potato and mix well.

Step 4

Spread 1 tsp red chilli sauce on each tomato tortilla, place a portion of a cooked vegetable at one end, spread mozzarella cheese over it and roll.

Step 5

Heat 1 tsp oil in a non-stick grill pan, place the rolls in it and cook, turning, till the grill marks appear all around.

Step 6

Halve one of the prepared tomato rolls and arrange all of them on a serving plate and serve immediately.
