Ingredients list for Toad in a Hole
- 3-4 Chicken sausages
- 1 cup Eggs beaten
- 1 cup Refined flour (maida)
- 1 cup Milk
- 1 medium Onion
- 1 tablespoon HP sauce
- 1/2 teaspoon Crushed black peppercorns
- 1/2 cup Mixed herbs
- 1 tablespoon Oil
- to taste Salt
Method
- Preheat oven to 180 C.
- Put equal quantities of flour, eggs and milk in a mixing bowl and mix well to make a batter without any lumps.
- Dice the sausages and put them into six muffin moulds.
- Pour the egg custard into the muffin moulds and bake in the preheated oven for ten to fifteen minutes.
- To make the glaze, slice an onion. Heat oil in a non-stick pan, add onion and sauté for two to three minutes.
- Add crushed black peppercorns and mixed herbs. Add HP sauce and some water and mix and cook for a few minutes or till the mixture reduced slightly. Add salt and switch off heat.
- Remove the toad in a hole from the oven, pour the glaze over it, transfer onto a serving plate and serve immediately.
