Ingredients for Thai Chicken Rice Recipe
Boneless Chicken cut into 1 cm pieces 400 grams
Basmati Rice soaked 1 1/2 cups
Oil 2 tablespoons
Shallots chopped 4 tablespoons
Ginger chopped 1 teaspoon
Curry powder 2 tablespoons
Garlic chopped 1 teaspoon
Thai red curry paste 1 tablespoon
Salt to taste
Coconut milk 1 cup
Fresh red chillies 2
Lemon juice 1 tablespoon
Heat oil in a rice cooker, add shallots, ginger and garlic. Mix and sauté for 1 minute. Add red curry paste and chicken and mix. Add curry powder, salt and 2 cups water and mix well.
Add rice and mix well. Add coconut milk and mix again.Diagonally slice red chillies and add along with lemon juice. Mix well, cover and cook till done. Serve hot.
