Ingredients list for Tequila Fired Chipotle King Prawns
- 8-10 King prawns deveined and slit lengthwise
- to taste Salt
- 2 teaspoon Lemon juice
- 1 tablespoon Chipotle in adobo sauce
- 2 tablespoons Oil
- 1 tablespoon Garlic finely chopped
- 2 tablespoons Onion finely chopped
- 2 tablespoons Mixed bell peppers finely chopped
- 1/2 tablespoon Fresh coriander finely chopped
- 2-3 tablespoons Tequila
- for garnishing Lettuce leaves
- for greasing Lemon wedges
Method
- In a bowl marinate the prawns with salt,one teaspoon lemon juice, chipotle sauce and refrigerate for ten minutes.
- Heat oil in a non-stick pan. Add garlic and onions and sauté till they turn translucent.
- Add bell peppers and sauté for a minute.
- Add marinated prawns mixture and sauté for two-three minutes over medium heat.
- Add lemon juice and coriander. Mix well.
- Pour tequila in a ladle and heat it over gas flame for about thirty seconds and add it to the prawns. Mix well and remove from heat.
- Serve on the bed of lettuce leaves garnished with lemon wedges and serve hot.
