Ingredients list for Suran Aloo Subzi

  • 400 grams Yam sliced
  • 2 large Potatoes boiled
  • 2 tablespoons Ghee boiled
  • 1 teaspoon Cumin seeds
  • 1 /2 teaspoons Sesame seeds (til)
  • 1/4 teaspoon Turmeric powder optional
  • 1 1/2 teaspoons Red chilli powder
  • to taste Rock salt (sendha namak)

  1. Boil suran till done. Cut into small cubes. Reserve cooking liquour.
  2. Cut one boiled potato into small cubes and mash the other. Heat ghee in a pan and add cumin seeds.
  3. As they begin to change colour add sesame and suran cubes. Mix well and add potato cubes, turmeric powder and red chilli powder.
  4. Add cooking liquor and stir. Stir in mashed potato to thicken the gravy.
  5. Add rock salt to taste. Garnish with chopped coriander leaves and serve hot.
