The most common impression about Mexican food is that it is hot and wholesome and has many similarities with Indian food. And like Indian cuisine Mexican is not one single cuisine but many. There is a feast of flavours for the food lover as the waters of the Gulf of Mexico and the Pacific Ocean teem with fish, while the adjoining regions bloom with luscious fruit like pineapple and papayas. The high plateau yields wonderful vegetables and the north is cattle country…..and to bind all these in one single string are chillies…in every shape, colour and size, from the subtle to the strong, producing a signature to Mexican cuisine.

Ingredients for Summer Vegetable Mix Recipe

  • Zucchini , sliced 1 cup

  • Yellow squash , sliced 1 cup

  • Broccoli florets 1 cup, blanched

  • Jalapenos , sliced 2 tablespoons

  • Red pepper , juliennes 1 medium

  • Yellow bell pepper , juliennes 1 medium

  • Green capsicum , juliennes 1 medium

  • Oil 2 tablespoons

  • Garlic , chopped 1 tablespoon

  • Onion , sliced 1/4 cup

  • Chipotle in abodo sauce 2 tablespoons

  • Salt to taste

  • Black pepper powder to taste

  • Coriander leaves , chopped 2 tablespoons

Method

Step 1

Heat oil in a non-stick pan, add garlic, chipotle in adobo sauce, salt and pepper powder and sauté for 1 minute.

Step 2

Add jalapenos, onion, capsicums, zucchini and yellow squash and sauté lightly.

Step 3

Add broccoli and coriander leaves and toss to mix.

Step 4

Serve hot.
